Mushroom Soup

Ingredients

  • 150g Mushrooms (closed cup may not offer enough flavour)
  • 250ml Vegetable Stock
  • 50g Butter
  • 2 tablespoons of double cream
  • Pepper

Method

  • Chop the mushrooms into 1cm cubes
  • Melt the butter into a pan and add the mushrooms and pepper to taste
  • Stir until the butter is absorbed
  • Add the vegetable stock
  • Cover and simmer for five minutes
  • Stir in the cream to thicken
  • Blend and allow to cool
