Ingredients
- 150g Mushrooms (closed cup may not offer enough flavour)
- 250ml Vegetable Stock
- 50g Butter
- 2 tablespoons of double cream
- Pepper
Method
- Chop the mushrooms into 1cm cubes
- Melt the butter into a pan and add the mushrooms and pepper to taste
- Stir until the butter is absorbed
- Add the vegetable stock
- Cover and simmer for five minutes
- Stir in the cream to thicken
- Blend and allow to cool
